Erin Katherine Thompson, 60, of Buhl, passed away Saturday, Sept. 17, 2025, at her home.
Erin was born to Charles B. Murphy and Sylvia (Kim) L. Roeder on July 11, 1965, in Long Beach, CA. She was Charles's only child and the youngest of Kim's four children. Erin spent the first few years of her life in California with her parents. She was later moved to Jerome, Id, where she was taken in and raised by her grandparents, Alfred and Katherine Morfin. She attended school in Jerome all the way up to graduation. Shortly after graduation, on August 27, 1983, she married her high-school sweetheart, Marvin Conn Thompson. It was there that they welcomed and raised their two daughters, Sara and Danielle.
Erin started her working career doing dispatch for the Jerome sheriff's office before moving to health and welfare for the state of Idaho. She worked for the state until the early 2000s when she ventured out and started her own business, a convenience store/deli/coffee shop, aptly named The Tiger Stop. Marvin and Erin ran the tiger stop until the sudden passing of Marvin in 2013.
After Marvin's passing Erin married her husband, Steve Colver. They resided in Nampa, Filer, and Jerome before deciding on Buhl as their permanent home and place of her passing.
Erin's time was mostly spent with her family and friends, whether it be camping in some of her favorite places; hosting game nights or having casual phone conversations for hours on end. Erin was always the life of the party and made friends easily. In 2010 Erin experienced life changing health issues that slowed her down, but she did her best to continue living life to the fullest.
Erin was preceded in death by her grandparents, Alfred and Katherine (Napravnik) Morfin; her parents, Charles Murphy and Sylvia (Kim) Roeder; her husband, Marvin and her sister Shelly Simmons.
She is survived by her husband, Steve Colver of Buhl; daughters, Sara (Patrick) Williams of Jerome and Danielle Drake of Twin Falls; brother, Todd (Leticia) Simmons of California; sister, Kimberly Ward of California; four grandchildren, Nora, Connor, Addysen and Trinity; and several nieces, nephews and cousins.
In accordance with her wishes, cremation has taken place.
A memorial service will be held on Saturday, September 27th, at 11am, at the Comfort Inn-Twin Falls on Crossroads Point in Jerome.
